All right, this recipe is to satisfy the some requests I get for side dishes to serve with your BBQ main dishes which are commonly meat of a heap of kind. For those that are tired of potato chips or potato salad, I offer you the “smoked grilled potato.”

This recipe actually offers two benefits.

The primary – you may get a baked potato without making your entire house feel like a furnace from using your oven. This is specially primary when you entertain over the summer and don’t want to make your inside guests too uncomfortable.

The second – using your kettle grill to smoke the potatoes imparts a very distinctive flavor to the potato skins and who doesn’t love potato skins!

You will initial want to wash and arid your potatoes, I prefer russets. Once dry, poke them with a fork various times on all sides. This will keep the potato from rupturing by permitting the steam inside to escape. Next, cover each potato lightly with your choice of Crisco, butter, or bacon grease then lightly salt and pepper. The grease will help your seasonings stay on the potato.

For your charcoal grill, light your charcoal in a chimney starter and place a drip pan in the middle of your kettle grill. Once the coals are hot, divide them on each side of the drip pan. You will then take your choice of woodchips (pre-soaked in water) and place numerous on each mound of hot coals. Experiment with dissimilar wood flavors. You will be richly rewarded because the flavors are actually captured in the potato skins. Try Maple, Apple, or Hickory, they are all very good.

Place your potatoes in the middle of your grill away from direct heat. The potatoes will have to be soft on the inside with a crispy wrinkled skin in with regards to 1- 1.25 hours. If you have larger potatoes that aren’t finished in when it comes to an hour, you may want to reload your grill with more hot coals. The skins are likely good and smoke flavored by now so you shouldn’t need more wood chips at this point.

Serve them as you would ordinarily with your bestloved toppings – butter, sour cream, chives – whatsoever you like.

5Really Surprisingly Good Baked P-Chips! MMmm!

I’d pretty much given up on baked potato chips cause I hate that funky texture that, for instance, the Lays one has.

Since I really love the organic Kettle Chips in chipotle flavor, I decided to give these a go. I got the lightly salted first, and the texture was great. They were very nearly like regular. (A very minimal difference). Crispy, potato-y. Nice.

I then ordered these, and I love them. Much tastier than the somewhat bland “lightly salted” regular ones. They’re sweet and smoky. A very nice barbecue flavor, I have to admit.

I really hope they make the chipotle flavor in baked (and organic). I’d buy those in a heartbeat.

So, for folks looking for a non-fried potato chip alternative (great for brown bagging lunch, four servings to a bag makes them more economical), I recommend the Kettle Bakes. Very good product.

These are $3.79 a bag at my local grocery – 15 bags at $34 is a great price. These arrived fresh at the end of April with a best buy date of late August. Great chips!
